i have to start out by giving my husband credit for the idea of making mug brownie mix. one night as he was putting together a mug brownie for himself (a process which takes all of 5 minutes, start to eating brownie), he bemoaned that he wished it wasn’t so haaaard to make a mug brownie. after i finished laughing at consoling him, it occurred to me that others might also enjoy the opportunity to cut down the time that elapses between thinking “a brownie sure would be tasty right now” and sinking their spoon into a warm mug brownie.

these caramel swirl brownies are one of those magical recipes that *seem* a lot more complicated to make than they are. the brownies come together easily and the caramel swirl is actually just the caramel apple dip that is so ubiquitous on grocery store apple displays in the fall. i succumbed to the lure of easy caramel apples and while i found the dip lacking for making true caramel apples, it was delicious in dark chocolate brownies.

now, granted, there’s hardly a dearth of black bean soup recipes out there. what i like about this one, though, is that the results are far tastier than you would expect after a mere 20 minutes of cook time. many soup recipes seem to call for simmering the soup for a length of time that feels nearly endless when you’ve arrived home from work, it’s dark out, you’re hungry, and it’s too chilly outside to cozy up with a nice bowl of cold cereal. this spicy black bean soup recipe will have you laughing at the fleeting idea that you might eat cereal for dinner (again…) in a mere 30 minutes, start to finish.
