this recipe started off as an attempt to replicate a chicken, corn, cotija, and avocado panini that i love to get from crema café in harvard square. somewhere near the intersection of laziness and not liking chicken *that* much, we ended up with two versions of this sandwich. and i would argue the lazy imposter is better than the original….
chicken gyro with tzatziki sauce
let me start off with the obvious: i am not from greece, turkey, or any another country with a long and storied tradition of cooking meat vertically and cramming it into delicious sandwiches. that said, the best chicken gyro with tzatziki sauce i ever had was either the one i had in berlin, germany (which apparently has quite a brisk ‘doner kebab’ business, as this type of wrap is known there) or the one i ate in vianden, luxembourg. my point is, let’s not allow concerns about authenticity to stand in the way of getting a delicious and reasonably healthy dinner on the table tonight….
end of summer vegetable pasta
when i was little, every year my family would spend a week or two on cape cod, usually in mid-august. besides swimming in the ocean and hunting for periwinkles at the water line on the big rocks in the harbor, one of my favorite memories was of the ‘tennis court movies’….
burrata and nectarine salad
i am nothing if not consistent. when reading a recipe, if it contains salt, i will add less than what is called for (that may be another topic for another day…). if it contains garlic, i will use (lots) more than specified. and if the recipe calls for peaches, i will invariably substitute in nectarines….
corn and goat cheese enchiladas
late last summer (as in, september, but it was still warm out), my husband and i spent a few days at the cape. one of the nights we were there, we ate out at a mexican restaurant in town.
now, i don’t think i’ve mentioned before but, my husband grew up on the west coast. this is relevant because, like every other single person from the west coast, he looks down on east coast skiing and east coast mexican food (the mexican food i will concede but the skiing i’m not sold on yet)….
