blueberry crumb bars

delicious blueberry crumb bars are gluten free & can be dairy/lactose free! they freeze well & have crystallized ginger in the crumb topping for added yum!

this is my attempt to sneak one more blueberry recipe in this summer before all of the blueberries are officially (and depressingly) gone. i first made these blueberry crumb bars last summer and i remembered enjoying them, so i thought they’d be a fitting farewell to blueberry season (::tear::). and they’re gluten-free, which is either exciting or vaguely frightening, depending on your dietary situation (but the bars are good, so let’s all just be excited that we can share with our gluten-free friends!).

this blueberry arugula salad is quick to assemble and delicious - perfect for summer! add chicken for a meal or keep it as a vegetarian side.

the basic version of this salad (sans blueberries) is one of my favorite salads to make year round. it comes together quickly and, aside from the arugula, i usually already have the ingredients on hand. which is totally a bonus when you’re trying to convince yourself that adding more vegetables to dinner really isn’t any extra work. easy summer bruschetta

quick, vegetarian, and tasty bruschetta to showcase delicious summer tomatoes. only 5 ingredients and 10 minutes to prepare a fresh, seasonal appetizer.

i have to admit, this bruschetta came from pretty humble beginnings.  by which i mean, at the time i made it, i was so hungry i was just grabbing whatever i thought would turn into sustenance the fastest.  luckily, it ended up being very tasty sustenance.  and i somehow – somehow – managed to take a photo of it immediately before devouring the entire thing, practically in one giant bite.

blueberry banana gingersnap tart is perfect for the height of blueberry season! simple to make: blueberries, banana yogurt and a gingersnap crust.

for the first 25 or so years of my life, i was convinced i hated blueberries, at least fresh ones.  my dad would buy them year round and when i would pluck one out of the basket and pop it into my mouth in, say, january, it was never any good.  therefore, blueberries must be gross.
